The Gavoty family has farmed vines at Cabasse since 1806 — seven generations across fifty organically farmed hectares, on the clay-limestone soils of the upper Var. The Grand Classique is aptly named: it is the house wine, the one that shows what the estate can do.

Tenuta Lelli

Rufina is the smallest and highest of the Chianti zones — and the coolest. Its hills east of Florence yield tauter, brighter wines that age remarkably well. An Italian on a Provençal list: that is deliberate.

Domaine Lafran-Veyrolles

Bandol, twelve organically farmed hectares, and a house run since 1975 by Claude Férec-Jouve — whose father, Louis, was one of the appellation's pioneers. Tradition is the estate's everyday Bandol, insofar as a Bandol can be everyday.

Mourvèdre speaks here: black fruit, pepper, leather, and that saline freshness which marks the wines of Bandol.

Alone

Domaine Alone · 2021

Made from 100% Grenache, half destemmed, this wine wears a brilliant ruby robe. Plot-by-plot vinification respects the identity of each lot, before ageing on fine lees in ceramic and porcelain spheres and in wooden foudres — a twin process that preserves the brightness of the fruit while building depth.

Tasting
A highly perfumed first nose: strawberry slow-cooked in the copper pot, violet, peony, lifted by light spice notes of Sichuan pepper. On the palate the delicacy of those perfumes meets a juicy, intense fruit, followed by a creamy, persistent finish.

Palette Rouge

Château Simone

Palette is one of the smallest appellations in France, and Château Simone is its name: the Rougier family has watched over it for nearly two centuries, on north-facing slopes of limestone scree. The vines average over fifty years of age, and some plots are more than a century old.

Grape varieties
Grenache 45%, Mourvèdre 30%, Cinsaut 5%, and 20% secondary varieties — Syrah, Castet, Manosquin, Carignan, various Muscats.

Winemaking
Harvest entirely by hand at full ripeness, with sorting; fermentation on indigenous yeasts, fifteen to twenty-one days on skins in small vats, pressing on vertical hydraulic presses. Ageing entirely in wood: eight months in small foudres, then a year in oak barrels of differing ages. Bottled unfiltered.

Famille Perrin

One of the great wines of France, and a singularity: Beaucastel blends all thirteen historic grape varieties of Châteauneuf-du-Pape, where almost everyone else stops at three or four. The Perrin family pioneered organic farming here from the 1950s, then biodynamics from the 1970s.

Grape varieties
Grenache and Mourvèdre in equal parts (30% each), Syrah 15%, Counoise 10%, Cinsault 5%, completed by Vaccarèse, Terret Noir, Muscardin, Clairette, Picpoul, Picardan, Bourboulenc and Roussanne.

Tasting
Each variety is hand-harvested separately and vinified apart, before blending and a year in foudres. The result is a wine of rare complexity, holding power, elegance and freshness together — and ageing magnificently.

Virgin olive oil.

Its "old-style" taste comes from the fermentation of a selection of olives picked fully ripe in December. Stored for ten days in small twenty-kilo crates at 18 °C, they are then crushed. An unfiltered oil, produced at Domaine de Souviou in Le Beausset.

Miel de châtaignier

An organic chestnut honey, the exact opposite of acacia: dark, powerful, almost bitter on the finish. A honey for those who do not care for honeys that are too sweet.

Tasting
Very dark robe, woody and tannic aromas, an elegant bitterness that lingers.

Miel de lavande

The Provençal honey par excellence, organic as well. Its creamy texture and its scent are immediately recognisable — it is the taste of the high plateaux of Provence in July.

Pale, creamy, deeply perfumed, with a floral sweetness that masks nothing.

Confiture d'abricot

A house jam, cooked in small batches — the one you find at breakfast, and the one we are asked for often enough that we set some aside.

Whole pieces of fruit, little sugar, the acidity of the apricot preserved.
